Are you ever trolling pinterest when it seems like everyone you know is pinning cakes, pies, muffins, and just general diet sabotage?

Well I came across this recipe from Alexandra’s Kitchen, and something made me click on it.

To my great delight, it didn’t seem too complicated for a novice baker like myself. I thought I would modify a few things to see if I could make it slightly more healthy and it turned out great! Here’s what I did:

  • 4 tbs unsalted butter and 4 tbs smart balance, room temperature
  • 2 tsp. lemon zest or more — zest from 1 large lemon
  • 1/2 cup sugar + 1/4 cup stevia
  • 1 egg, room temperature
  • 1 tsp. vanilla
  • 2 cups flour
  • 2 tsp. baking powder
  • 1 tsp. kosher salt
  • 2 cups fresh blueberries
  • ½ cup fat free buttermilk

I contemplated using egg beaters for the egg, but since it was only one I left it in. I followed the rest of the recipe as written (the assembly and baking directions) except for sprinkling sugar on top. I did have to bake mine for 45 minutes, but it turned out great!

    That looks great! Very yummy! I have one on Pinterest I follow that makes weight watchers/healthy cooking and baking. I have tried a few of the recipes there, very good!
