Chocolate.

Mmmm.

Unfortunately even high quality dark chocolate has sugar and usually soy lecithin in it, making it off limits for the Whole Life Challenge. So when I need a chocolate fix, I have to keep these guys on hand.

DIY Mint Chocolate Larabars

  • 1 cup almonds (150g)
  • 1 cup cashew pieces (150g)
  • 1/2 tsp coarse grey salt
  • roughly 25-30 small dates or 175g
  • 2 tsp vanilla extract
  • 1 tsp peppermint extract (or fresh mint to taste!)

Start with the nuts and salt in the food processor and buzz until well combined and chopped. Add in the dates, vanilla, and peppermint and pulse until a coarse dough forms and it holds together. You may need to add more dates to get the right texture. Press into a wax/parchment lined 8×8″ baking dish and freeze to set. Cut into bars, squares, or whatever shape you like!

    What kind of food processor do you use? I have a Ninja that gets the job done pretty well but I’m saving my pennies for a Vitamix.

      Hi Julie – I have a cuisinart…I like it better for nut/date stuff than my NutriBullet. I’m with you on the Vitamix!! Would love one…
