It’s recipe time again! I seem to gravitate towards sweet treats lately :) It’s nearly impossible to find grain free, sugar free, dairy free ready-made sweets, so I really have to keep something on hand to help me stay compliant on the Whole Life Challenge. These lemon bars are perfectly tart and sweetened only with fruit. I hope you enjoy them as much as we do!

Raw Lemon Bars - Paleo and Vegan

This recipe is adapted from Oatmeal with a Fork.


  • 1 cup walnuts or pecans (I used a combo)
  • ¼ cup unsweetened coconut
  • 6 large, soft medjool dates
  • ¼ tsp salt
  • 1 tbs lemon zest

Lemon Filling:

  • 6 tbs coconut oil (1/4cup +2 tbs)
  • 3 tbs coconut butter
  • 5 tbs water
  • 3 tbs lemon juice
  • 2 tsp lemon zest
  • 5 medjool dates
  • dash of turmeric, for color (optional)

Buzz all the crust ingredients in a food processor until well combined. The “dough” should hold together if you squeeze it, but still be crumbly.

Press the crust into the bottom of a wax paper lined pan (I used an 8×8). Then combine all the filling ingredients in a high speed blender. I started this in my food processor, but to really get the dates blended I switched it to my Nutri-Bullet. You may need to add an extra tablespoon or two of water depending on how soft your dates are. Don’t be afraid to taste it and add a little more lemon juice or an extra date if you like! You could also add stevia if you like the flavor and want more sweetness.

Pour the filling on top of the crust and smooth with a spatula. Freeze to set (about 4 hours at least), then cut into squares and store in the refrigerator or freezer.
